Where in the documentation does it give the VP values for infantry casualties, cavalry casualties, and artillery losses?

It is not in the manual.

Infantry: (10 * casualties) / 25
Cavalry: (40 * lcasualties) / 25
Artillery: (60 * destroyed guns) + (30 * spiked guns)

Or, a little more simply:

Infantry: 0.4 * casualties
Cavalry: 1.6 * casualties

Casualty VP's can vary from game to game and even from scenario to scenario within a game although they are normally constant through any single game as it was left to the designer to make those settings.  If you look in the manual for the Scenario Editor it shows the Header Dialog which is where the VP values for Casualties are set.  The VP's are per Strength Point, you can find this in the Parameter Data, in most cases this is 25 men or 1 gun.  So if it is that important you can open the scenario in the editor and check out the Header Dialog.  Or start playing, verify the Strength Point level in the Parameter Data and you can divide the points by the casualties and multiply by that number to get the VP/Strength Point.

Played part of a turn, yanks lost 61 men for 24 points, Strength Point is 25 men.
61 men / 25 men/SP = 2.4 (Strength Points lost)
24 VP / 2.4 SP =10 (VP's per Strength Point lost)
