Try reading Manstein's Lost Victories. He had a major hand in planning Fall Weiss (Poland) and came up with the final operational plan for the invasion of France and the low countries (Fall Gelb). It describes the operations in some detail as well as giving Manstein's ideas as to what the allies should have done to thwart the Germans.
